1. Look for the production date.
Sadly olive oil is not like wine, the sooner you eat it the better the taste, I don’t recommend buying olive oil that is more than 30 months old. Also note that olive oil does not go bad, it just looses it’s magic taste and lovely aroma that distinguish it from the rest of the other oils. If your olive oil becomes old, mix it with one of your vegetable oil and use it for frying.
2. Look at the oil color.
Genuine olive oil should have greenish color especially when cold-pressed, some other experts disagree due to the fact that olive oil could vary in color depending on where the olives originated from. Personally, I worry about the color, it is a vital sign for freshness.
3. The USDA organic seal plays a big role in olive oil Quality
The U.S. Department of Agriculture PLAYS a vital role in deciding on a genuine product. And when you see this certification on the bottle, it will mean the product is made from organic olives grown without the use of harmful pesticides or synthetic fertilizers. But you don’t really have to go along with this, since there are a lot of good products of the same value out there without such a seal.

Producers who grow and press their own olives often include the name of their company and origin on the bottle. Having a name on the label is a sign of product quality. 6. Look for the first cold-pressed.
This means the olives were harvested and proceeded for oil in 24 hours, old-fashioned and rarely used methods of oil production. This method is not regulated by the USDA or the Food and Drug Administration, but that does not mean it should be ignored.
